The Elimination challenge was brutal. In a lot of ways, even at its strangest and most gimmicky, Top Chef mimics the real world in the sense that, when you run a restaurant, on a Saturday night, you don’t know who your customers are going to be and what’s going to go wrong. You might have to improvise. It was certainly a tough challenge. Plus it was 3 in the morning. The exhaustion factor with these guys was big.
I don’t know whether making soup was a strategy, but the chefs were desperate. They were in a limited situation. They were insecure with their environment, unfamiliar with the tools. They really had to wing it. I think they were playing it safe with soup. But I think the fact that a grilled cheese sandwich with tomato soup won tells you something. That was obviously a smart way to go. That wasn’t the time to start doing really complex food. Overcomplicating and overreaching is often a lethal strategy. I would’ve played it safe and tried to do the best I could to not go home. I wouldn’t have made this as my day to go home with the big money. But I never would’ve made it to the finals of Top Chef on my culinary skills alone. I was a journeyman chef of middling ability. Generally speaking the chefs on the show, most of them are better cooks than I am, though maybe not as experienced or as well or widely eaten.
That said, I don’t think it would be arrogant of me to say that I think I could have actually won the Rao’s challenge. I sure as hell could’ve done a hell of a lot better than three guys on a pasta course, which is still inexplicable to me. As for Antonia’s mussels, I understand the surprise and outrage that something so seemingly simple won, but it was by far the most delicious dish that day. Every single person at that table — judges and guests — all thought that dish was the most enjoyable. Antonia is a very smart chef and contender. She always identifies who she’s cooking for, what their expectations are, and gives people what they want. She’s very smart about not overreaching. The really talented cooks often get overly ambitious and end up doing something silly that doesn’t work. Antonia identifies the sweet spot, the emotional component of what makes people happy, and combined with very good cooking skills and her maturity, she’s played the game very well so far. I would’ve made spaghetti pomodoro — a classic spaghetti in a good red sauce like Scott Conant makes at Scarpetta. I would’ve stolen his recipe and it would’ve taken me about 35 minutes, and it would’ve made people at the table very happy. That was a challenge that if someone made a good bowl of spaghetti and meatballs, they would’ve won the day.
When it came time to eat at 3 a.m., the actual time didn’t really matter. I eat for a living and change time zones every few days, so as long as I get my sleep, I’m fine. We went right over to Judges’ Table from Target at about 7 or 8 a.m., so it was a long day. I slept on the floor of a trailer for an hour under a scratchy blanket. It was not gracious living. This Judges’ Table wasn’t long, but sometimes they’re really long. It irritates me when you see conspiracy theorists online saying that producers come in and it’s their master plan. All the times I’ve been on Top Chef, I’ve never seen the producers come in to influence the vote. Often I wish they would because we’ve spent hours at that table arguing the merits of who should win and who should go home. It’s often bitterly contested.
Richard’s arepas were a perfectly good, even very good, dish. Arepas don’t have to be beautiful. It was just less tasty and less welcome in this particular circumstance, and only by a hair. Richard is a monster talent. He’s a very, very strong contender. If Richard’s food wasn’t so good, if he wasn’t so talented, then [his frequent use of nitrogen oxide] would be an unforgivable and deranged exercise. But Blais’ food is generally really good. If he’s using some technique, even one that I don’t generally like, it usually seems to work. That’s a guy who’s used, for lack of a better word, restraint in the world of molecular gastronomy and usually to a better effect. Watching him compete is fun, too. He’s aware of his weakness, his tendency to over-think. In a lot of ways, the drama of Richard fighting his own demons is fascinating from the point of view of a chef and a guy who loves food. Even if I was never on the show, I’d be watching and particularly interested in his progress.
I really admire that Antonia did eggs. That was a ballsy, dangerous thing to do. As I’ve said many times, I’m a notorious egg slut. I have a personal soft spot for eggs. Mike’s soup didn’t make much of an impression on me, but between Angelo and Tiffany, Angelo’s dish made a big impression me — a bad impression. We could eat Tiffany’s dish. It wasn’t awful. There were unpleasant notes, but Angelo’s dish was just bad. It tasted bad when you ate it and literally left a bad taste in your mouth. It was over-salted, over onion-y, had an acrid aftertaste. It was a collapse. That was a shocking loss to me because Angelo is a really talented guy. It’s the flip side of when you see somebody win with something really simple. When you see a guy who’s really talented drop the ball with something so simple, basically a dish that’s a tweaked version of something that Applebee’s does, you feel for the guy, feel for a talented cook who just had a bad day, as sometimes happens. It’s like seeing a good baseball team at the playoffs that played great all year and may even be the better team, but it just happens that everything goes wrong for them. We see it again and again in sports, and it happens on Top Chef. I feel sorry for the guy, but it’s been well established that he’s capable of much, much, much better. Any other day, it could’ve been him with the win.
All the people who jump on Tom every time we send somebody home that they feel should’ve stayed should never forget and be reminded that Tom Colicchio is a giant of the industry. He changed the world of cooking. He keeps that show honest. Do not doubt it. He’s the moral center of the show. He’s a one man Rushmore.
Dale hit the flavor sweet spot. It was both delicious and clever. He used an iron, which showed us something special. He embraced the challenge and made something that was delicious, creative and smart. He did everything right. Dale has grown as a cook and as a person — and seems to have dealt with his anger issues almost entirely successfully. A good cook with a good palate, smart, creative — all god’s gifts. There have been wins where the winner simply sucked the least. But in this case, Dale’s dish was a tasty and clever dish that was right for the moment and challenge. Ultimately and most importantly, his dish made the judges happy, which is what cooking is about. When chefs lose sight of that — when they think it’s about their genius or impressing people with their technique or their advanced experience — that’s often a fatal impulse. Dale has made the judges happy with his food again and again, like during the bodega Restaurant Wars challenge. He really identified a theme that his audience would likely respond to and executed it smoothly. He didn’t overreach, and his was the best tasting dish.
At the end of the day, I do Top Chef because I’m a fan boy. I like hanging out with Tom and my chef cronies. You show up at 3 a.m. at Target or you bump into Eric Ripert and José Andrés — it’s fun. I’d watch the show even if I wasn’t on it. But I don’t feel any pressure [to say certain things]. It ain’t my show. It sure as hell ain’t the money, let’s put it that way. I think I get a fruit basket and tube socks for each appearance. There’s zero pressure. If I got nothing to say, I won’t say it. I just enjoy it. I’m a food nerd. It’s what I do. I enjoy finding myself getting angry over a botched pasta course just as much as I enjoy singing praises hyperbolically of somebody who did something really clever, unexpected and just right.

I think we all know Angelo was one of the best on the show… Dale’s Steak and cheese grinder, way too much salt- but he didn’t go home. Angelo deserved better. I honestly think they could have sent Tiff. home and there would have been no outrage. Oh well. I still have mad respect for Angelo’s talent- a class act!
Tom Collichio said that Dale’s “steak and cheese grinder” wasn’t really that salty. It sounds like Angelo’s soup was. Angelo got what he deserved, Ginger. Suck it up!
There is a BIG difference in an over salted dish (Dale’s from previous week) and a dish that literally leaves a bad taste in your mouth (Angelo’s this week). I’m not a fan of Dale’s AT ALL and I do like Angelo alot, but I have to be honest about what I’m seeing and hearing on the show.
Angelo was a talented chef, I didn’t expect him to go this early. One bad night…they were all SO exhausted.
Dale’s a turd. Really? His grilled cheese prepared with an iron was smart?!? Um, Target has panini presses…sandwich makers…could have put one griddle on top of another. I think a steamed sandwich sounds almost as gross as Dale’s arrogance.
Tom even said (via twitter) that the difference was one being over salted and one having way too much salt. It’s was not even on the same level.
That being said, I always enjoy reading Bourdain’s thoughts because he just says what he thinks. And I think Tom does too, so I may be sad to see someone go but I never doubt him. He’s a great chef for a REASON, and if we think we could do what all he does, then we are the fools. Get over it people
It’s really funny that people who weren’t there can tell what the food tasted like. “Way too much salt”–gosh, you must have one of those TVs with taste-o-vision.

I think the judges are told to keep certain chefs for their personality. So if it’s a close call as in this week’s challenge they’ll eliminate the chef with the weakest personality.

Julia.. if your comment was accurate, I don’t believe Fabio would have been sent packing last week. He has a personality made for TV, plus he is kindof good-looking. Maybe I am naive but I do believe in the integrity of this show.
Brilliant deduction. That’s why they sent Angelo, Marcel, and Fabio home yet still have Tiffani and Blais on – 2 people with riviting tv personalities for sure.

Julia, did you not read Bourdain’s blog? He specifically stated, for all non-believers,that the producers do not influence the judging – even though he wishes sometimes they would break into long jUdging sessions.
What part of this don’t you believe? Trust me, the producers would love to have Fabio and Angelo around longer than Isabella and Tiffany. They are TV gold, and Fabio should be part of a show. Work on that, Magic Elves!
Let’s see who they’ve eliminated thus far. New York’s Tiffany, Marcel, and Stephen…you know, the very vocal and loud ones that reality show producers kill to get on their shows because they “stir the pot”? And of course Fabio, the guy with so much on-screen charisma they picked him to HOST a special. Who are we left with that make that much of a mark on the TV? Carla. And that’s just because everyone’s wondering what she’s on. And Colicchio’s stated that the producers have only stepped in twice. Once when they were asked to by the judges and once during the haircut incident (not counting on Just Desserts when they stepped in over the guy that flipped out and had a panic attack). But yeah, keep beating that dead horse, because one thing we all know is that Bourdain and Colicchio ALWAYS watch what they say in the press so they don’t tick industry people off (and yes, that was sarcasm).

Your absolutely right I agree, the show is getting so ridiculous I mean Mr. Bordain says Angelo had a bad day. Now lets look at that Mr. Bordain, maybe you love to eat at 4 Am but the majority of people don’t, let alone cook if you could call it that.Running around a massive department store collecting subpar food,cheap equipment, and somehow conceptualizing a dish for not 1, but 100 people at 3 in the morning.WOW REALLY. I mean really are you serious. I know it’s entertaining but these are chefs not superhuman beings. Tom could’nt do it you surely could’nt nobody could,thats probably why they almost all made soup DUHH! That, Mr. Bordain, is not a “BAD DAY”. Not even close,ok. Get it straight. Totally agree with you! Dale didn’t go home the week prior for the SAME EXACT mistake Angelo made this week.
Dale didn’t go home the prior week because Fabio’s was worse than his. Yes, he over-salted, but Fabio couldn’t make a burger. How does a chef not know how to make a burger? That’s why Dale didn’t leave for over-salting.
Exactly, seasoning your dish is basic first grade in the culinary wold. If the judges were objective they would have sent Dale home last week.
Not same exact mistake. We are not capable of tasting the dishes from our side of the TV set. But, from what I have observed on the show and the comments of the judges were that Angelo’s dish was much more salty than Dale’s and had so many other differences that were so bad you tasted the bad for a long time after. This is a difference. Have you ever tasted a dish that was simply over-salted and one that seemed just salt? Or, have you ever had anything that literally left a bad taste in you mouth? There is a big difference! Also, when they were tasting it both Isabella and Angelo knew it was over-salted and had other problems. Angelo was upset he didn’t have enough time to correct it. I believe too that if we weren’t told who did what this dish would have been he worst. One of the things I like about thisshow versus other similar like Project Runway. Is the decision is made on that dish, not character, personality or previous challenges.
Last week I disagreed with several things the judges said about Fabio’s burgers. I have been to restaurants that use melted cheese/s on the Burger and sometimes they give it to you in a cup to put on. It makeseating more fun and you can put on as much or little as you want and dip French fresh in the rest. If separates, stir it. As for the meat being meatloaf. To me that would-be preferable as it would be tender and more juicy. I have been to placesthat use other meats great burger in addition to the beef. It’s great! I would like to try his Burger, not because of his accent or likability, etc, you cannot eat those, but because it sounds and looks wonderful. This season has really been about top chefs. It is going to seem nitpicking and close calls and degrees of excellence or bad. It mightbe someone uses alittlemore salt than someone else to win or go home, because, especially at this point, everyone left is a top chef. They cannot have ties, so I bet we will be seeing the judges looking for anything that might through one meal under or over another.

each person has different tastebuds and taste things differently. Seasoning is not basic cooking101, because of this. I think that’s why especially. The first few episodes each season we ear a lot about salt. If everyone had same tastes and salt level preferences restaurants would not have salt and pepper on table.

Angelo is hit-and-miss. He was in his season and was shown to be the same in All Stars.
First, if I believe anyone, I believe Tony Bourdain because he is brutally honest. Also, people seem not to get it that it doesn’t matter what you’ve done all season. You could have won every quick fire and elimination, then had the worst dish one week and go home. It’s not an accumulative score. If Angelo had a taste that was so salty Tom couldn’t eat more than 1 spoon, that’s pretty bad.
When Dale was on the first time, I could not stand to watch him, but he has really put the work and time in himself, to become a better person and chef and he is a joy to watch. No love loss for Angelo I think he is talented just ask him, but I kind of loved that he went home asking some help from Isabella when he sabotaged so many people. Glad he is gone especially over Carla I don’t know if she is the best chef she probably isn’t but she is one of the best people and even though it doesn’t it should count for something. I thought it was kind of funny in the episode for Target looking for some advertising and the chefs kept trashing the store and the equipment. Oh snap! No coconut, the grills didn’t work well. bummer. Love the show always have always will!
A few seasons ago the chefs had a quick fire using caneed food and Juarez about all thought is absurd because they never cooked with canned food or ate it. I don’t think they were trashing Target, they were just showing they are not used to what normal cooks use. I wonder Houghton how many will sedition that way. There W’s alot of great advertising showing what products they do carry andthatyou can do awhile meal from table to salt withoutleavingthe store..I haveseen eat in my targets

Angelo is talented for sure, but both he and Tiffany have seemed a little tired all season– perhaps because they went almost directly from their season to the All Stars season (after all, two or three months break isn’t very long when you’re competing in this kind of competition). Plus Angelo spent a lot of his time getting food for Mike when he could have been making his own dish (not that helping out another contestant is a bad thing)).
And I don’t know if I think that Angelo is one of the more talented chefs left- Blais, Dale, and Carla (and apparently Antonia) are all excellent chefs who have won over and over again this season.
I was surprised to see Angelo get the boot. I thought for sure Carla was going home. Dale has impressed me all season. He reminds me of Kevin from Season 6. He may not have as many techniques at his disposal as Michael Voltaggio (of Season 6) or Richard Blais does. But his food seems to have loads of flavor–just like Kevin. I think he’s going to win Top Chef All Stars with Blais as the runner up.
I was sure Carla was going, too. She was getting “the edit”–early in the show she talked about winning it, then obviously she had timing problems at the challenge that led to an underdeveloped dish. I’m glad she’s still there, though–love her!

I thought that it’d be “no win” Tiffany that got booted if it wasn’t Angelo, not Carla the Muppet. Many have said that Season 6 had the most talented chefs overall, but the Top 3 last night were all from Season 4. Season 4 has always been one of my favs, and last night showed that it had some really good chefs.
Anyone with an ounce of culinary sense would know that Angelo is and was the best chef on both this and his earlier season. With him gone, there’s no reason for me to continue watching the rest of this season’s fare. BAD CHOICE OF ELIMINATION!!!

I wanted him and Richard in the finale because I think they are the best chefs in the All-Star season. It would have been an awesome showdown. Thanks Bravo for depriving us of that. But, whatever. Keep it up with these “shocking eliminations,” if that’s what makes for good TV. Ugh.

Finally someone that knows a great chef, and what it takes to be one. Your dead right, Angelo was the best “CHEF” last time and I think probably the best “CHEF” this season aswell. Most people on this Blog are merely watching a tv show for Tv values and have tv lovers insight,they’re not wrong, just not right thats all.

I think from now on, EW should let Bourdain do all the recaps. I also believe that his sports analogy is spot on. Even the Lakers lost to the Cavs tonight. Angelo was definitely in the top 3 chefs remaining, behind Blaise and Dale, and had a pretty bad day. I’m sure Tiffany will go home soon enough not for being bad, just for not being great. Great season in any event.

Angelo was by far my least favorite. He was a good chef, but I am so glad to see him go.
Very sorry to see Angelo go. I’ve enjoyed his appearance on the show since the beginning of Season 7. I really thought Tiffany would be leaving and I definitely would have preferred it.
But, I must admit I’m thrilled that Carla squeaked through this week. She’s been doing so well and is such a joy to watch.
I was afraid Carla was gone too. Glad she’s still in the game.
If she had her salmon and was able to use her soup as a sauce as she intended…sounds like she would have won.
I am still amazed that Angelo didn’t realize his food tasted too salty??? That said, one of my best moments were of simple food as Bourdain said…fisnhed a tennis tournament in northern Italy and the hosts invited up to a castle inthe next town higher up…and teh chef served spaghetti pomodora…at way past midnight….that and wine made for a most memorable scrumptious meal … just perfect… so kudos to Dale for simplicity and cleverness..iron chef indeed!

I think the call was right. He’s a talented chef who has worked with the best, but too much salt and bad finish he should have caught early on and corrected somehow.It bothers me that I don’t see more of the chefs tasting all the way through the prep and the cooking. Perhaps they’re editing some of that out? I always enjoy Mr. Bourdain’s commentary and his perspective.
That soup was Angelo’s first really bad dish (IF it was that bad) while Tiffany has consistently done poorly or just barely there. Some consideration should be given to past performances. So Angelo should have stayed!!! He’s one of the best!
there has to be a way that this is taken into consideration. the kamikaze approach often leaves the show with some very questionable winners. i’m thinking of the guy who won the season fabio was on, for example.
Hosea had no business beating Stefan or Fabio.
I would like to see Top Chef or some new show developed based on a cumulative points system that runs through the entire season. Points per dish, per challenge, and the one at the end of each episode with the lowest cumulative points goes home. It would allow for a bad dish here and there and truly elevate the best of the best.
I find it bizarre that the judges gave Dale extra Cook Cute points for using the iron! Would the taste have been any different on, say, a panini press or a George Foreman grill? Can’t believe he won $25 grand for a dish every mom makes for her kids.

Agree. He used an iron to grill because he said he use to do that when he was broke, so that’s where the inspiration came from. Awesome, but come on. I’ll remember next time I’m in Target to buy an iron to make grilled cheese sandwiches rather than a panini press. It apparently makes the better food.
Plus, he had to iron all those sandwiches!

No Dale won because they liked the technique, the judges thought it was cute. His tomato soup was not from scratch it was canned and all he did was add hot sauce too the soup. Should have been Richard or Antonia that won. Sorry.
wow! now that was a BLOG! bourdain absolutely should be on top chef full time. I agree w/ him that chef Tom C. keeps the show honest but(a big BUT) Tom C. needs to show more of his skills in competition like TC masters/iron chef(flay/batali/susur did it-why not you Tom?)…so sad that angelo packed his knives. I thought talent/culinary experience wise, he was the closest to blais. bb

Sorry, bb, but I disagree. I can’t stand Bourdain on the show. His demeanor is unpleasant and he is always talking down to the contestants. This blog entry is similar, e.g., “”The chefs on the show… [are] not as experienced or as well or widely eaten.” Tom’s style is similar, but without pretension. I have definitely been missing Gail this season when she’s away… (but at least Toby isn’t back!).

the sad thing about a show like this with all the gimmicky challenges – the best, most talented doesn’t always win. as i typed this, i thought about sports, especially sports contests where one lost can send you home. the show is fun but the person who wins is not always Top Chef. they’re the winner of the television show, Top Chef. my question to mr. bourdain (‘m a HUGE fan): is there a format where you can take the most brilliant chefs and allow them to compete where the wins are based on doing a great job and not strategy ?
I really like Top Chef but I noticed that Chopped is having a Chopped Masters (with various celebrity chefs and judges) coming up which looks like it might be fun. Still involves strategy (like everything in life) but perhaps not as much commercial gimmicks.
