I love your suggestion of Stevie Nicks! And I really enjoyed Leah’s Q&A with Stevie that you linked to.
I’m not familiar with the most of the others Michael recommended, but Allison did a great job with Janis Joplin’s and Bonnie Raitt’s songs on Idol.
